It’s been a quite a while since I last posted a recipe on here. I did have a couple of recipes planned for over the festive period but obviously that never happened. I will just have to keep them aside until later in the year. No doubt it will just feel like a few months have passed before I am publishing those posts!! This Slow Cooker Spanish Chicken is an ideal midweek meal. Just throw all the ingredients into the slow cooker before you head out the door for the day and it’s all ready for you when you come home. Although I have used chicken breasts for this recipe you can always swap it for chicken thighs instead.
I’ve added some black olive halves to this dish (8 olives = 1 syn) so when portioned up will make the syn value negligible if you are following a Slimming World diet. However if you’re not following that diet knock yourself out and chuck in some chopped chorizo or even some red wine. Or you can still do that but remember to syn them!

Cut chicken into pieces. Place into slow cooker
Chop onion and peppers then add to the slow cooker along with the remaining ingredients.
Don’t forget to switch on slow cooker!!
Cook for 4-5 hours on high or 6-7 hours on low
Cut the olives into halves and add to the cooked dish to heat through
Serve with mini roasted potatoes, rice or with crusty bread
Garnish with chopped parsley
Serve with rice, mini roasted potatoes or crusty bread. For more speed food to your plate add some steamed broccoli, asparagus or a side salad.
Make it veggie: Either replace the chicken with quorn pieces or use vegetables such as courgettes, aubergine and mushrooms.
Make it fishy: Replace the chicken for fish such as cod or seafood like king prawns, squid or mussels.
Chopped chorizo: Add some chopped chorizo for extra flavour.
Swap the beans: Try adding haricot, cannellini or chickpeas instead.

I have this in the slow cooker at the minute it smells lovely. I substituted the butter beans for kidney beans in chilli sauce as I didn’t have butter beans!

I love olives so I added quite a bit to my dish but I would say if you are leaving the olives whole then around 2 tablespoons worth. I hope you enjoy this recipe 😊

I’ve got it in the slow cooker now. Added some chorizo slices, but didn’t add olives…I hate them. I’ll send a photo when it’s cooked
