You know those days when you just cannot be bothered cooking and are just wanting something really easy and quick to make. Yep, we all have them! Well, this is just the recipe for those times plus it’s probably already things you already have in your fridge and cupboard. All you need are four ingredients and about 20 minutes cooking time. So much quicker and cheaper than a takeaway! This recipe makes enough for two people but you can adjust it accordingly to however many people you are feeding.
2 Chicken breasts (cooked) cut into cubes or you could use Quorn Pieces
Jar of Pesto Sauce
10 Cherry Tomatoes (halved)
Cook your chicken as directed or you could use leftovers from your Sunday Roast
Boil your pasta as directed on the packet. Once the pasta is cooked al dente, drain and place back into the pan. Add the cherry tomato halves, chicken/Quorn and 1 heaped tablespoon of pesto and mix until they all thoroughly coated.
Season with black pepper and serve with a green salad. Yum!!
