Well not long to go until the big day now. Have you finished your Christmas shopping and are now spending the time relaxing or are you still running around manically trying to get everything on your list done? For me, today has been a busy day with cleaning, setting up the table for our Christmas Eve get together and baking. These Chocolate M&M Cookies are what I made earlier today and they taste delicious. If you eat them when they are still warm out of the oven, the chocolate is lovely and gooey.
These cookies aren’t hard but lovely and soft and are ideal for leaving out for Santa Claus along with a carrot for Rudolph. I have it on good authority that Santa Claus loves Chocolate M&M Cookies.
(Makes 30-35)
200g Butter
200g Soft Light Brown Sugar
2 Tablespoons Golden Syrup
300g Self-Raising Flour
170g Chocolate M&Ms
Pre-heat your oven to 180 degrees (or 170 if you have a fan oven).
Line your baking sheets with grease proof paper.
Place the butter and sugar and beat (either by hand or a stand mixer) until pale and smooth.
Add the golden syrup and mix in.
Add 150g of the flour and mix in until smooth then add in the remaining flour.
Stir in the M&Ms.
Roll small amounts of the dough between your hands into smooth balls. This makes around 30-35 cookies.
Place onto the baking sheets, spacing them well apart as they will stick to one another during baking when they start to spread.
Bake for 8-10 minutes, or until golden brown.
After 3-5 minutes, transfer them to a wire rack to cool.
Eat and enjoy!
