My name is Denise and I am a fajita addict! I love, love, love Fajitas and they are more or less on my menu every week. Although they are occasionally chicken, steak or prawn fajitas it is more often than not vegetable ones that I make at home. Also if I make them at home I have to use the Old El Paso Smoky BBQ Mix as nothing hits the fajita spot as much they do. I have tried others but they just aren’t as nice. If you are having fajitas then salsa and guacamole is a must, you just cannot have them without them as they make those tasty filled wraps so much better.
I normally buy ready made guacamole and will either use the salsa that comes in the fajita pack or I will buy a Salsa dip. As we don’t end up eating it all it ends up in the bin. So I decided to try making my own to save waste. These are the recipes that I use to make my own. They are very easy to make, require no cooking and taste delicious. They are good dips for your nachos too. This recipe makes enough salsa and guac for around 6 people (depending on how much you like to fill your fajita with, in my case it’s a lot!).
150g Tomatoes (deseeded) I used a mix of yellow and red baby ones
Half a small red onion finely chopped
Half a yellow pepper finely chopped
Half a mild Green or Red Chilli finely chopped
2 cloves Garlic, minced
Small handful of chopped fresh coriander
Salt & pepper to taste
Juice of half a lime
Add above ingredients to a bowl and mix well
2 Ripe Avocados
3 garlic cloves minced
1 Tomato or 3 baby tomatoes deseeded and finely chopped
Half a small red onion finely chopped
Half a mild green or red chilli finely chopped
Juice of half a lemon
Small handful of fresh chopped coriander
Salt & pepper to taste
Remove the flesh from the Avocado, place in a bowl and mash using a fork.
Add the rest of the ingredients and mix well.
Serve these tasty Mexican dips with your fajitas topped with cheese and soured cream or alongside your nachos, yum!
