Veggie Breakfast Tray Bake

This Veggie Breakfast Tray Bake is the perfect weekend lazy breakfast or brunch.   This syn free dish is packed full with veg and protein so it will fill you up until dinner time!

Ingredients

  • 3 Medium Sweet Potatoes
  • 2 Medium Onions
  • 4 Linda McCartney’s Red Onion and Rosemary Sausages Frozen
  • 8 Mushrooms Quartered
  • 8 Cherry Tomatoes Halved
  • 1 400g Baked Beans
  • 4 Eggs
  • 1 Tbsp Fresh Parsley Chopped
  • Frylight
  • Salt and Pepper

Instructions

  1. Preheat oven to 200°C or 180°C (fan)

  2. Peel and chop sweet potatoes. Peel onions and cut into wedges.

  3. Place the onions and sweet potatoes into a large baking tray and spray with Frylight before placing in oven for 20 minutes.

  4. Remove from oven and add the mushrooms, tomatoes and sausages. Return to the oven for another 15 minutes.

  5. Remove from oven again and make 4 spaces in the tray to crack the eggs into. Add the beans around the tray then return to the oven.

  6. Cook for another 10 minutes for a soft egg yolk. If you prefer a hard egg yolk cook for a bit longer.

  7. Season with salt and pepper and garnish with the chopped parsley.
