Slow Cooker Spanish Chicken

This Slow Cooker Spanish Chicken is quick and easy to prepare and is ideal for a busy midweek evening.  Serve with rice, roasted potatoes or even some crusty bread.

Ingredients

  • 2 Chicken Breasts Cut into pieces
  • 1 Large Onion Chopped
  • 1 Orange Pepper Sliced
  • 1 400g Tinned Tomatoes Chopped
  • 1 400g Butter Beans Drained
  • 3 Cloves Garlic Minced
  • 3 Tsps Smoked Paprika
  • ½ Tsp Oregano
  • 1 Tbsp Tomato Purée
  • 200mls Chicken Stock
  • 1 Tbsp Flat Leaf Parsley Chopped (to garnish)
  • Salt and Pepper To season

Instructions

  1. Cut chicken into pieces. Place into slow cooker

  2. Chop onion and peppers then add to the slow cooker along with the remaining ingredients.

  3. Don’t forget to switch on slow cooker!!

  4. Cook for 4-5 hours on high or 6-7 hours on low

  5. Cut the olives into halves and add to the cooked dish to heat through

  6. Serve with mini roasted potatoes, rice or with crusty bread

  7. Garnish with chopped parsley
