It’s been a while since I posted a Slimming World recipe.  Truth be told I’ve not really been following it lately due to my Dad’s illness then death.  I’m now back on it and my fridge is full of fruit and veg instead of ready meals.  Having not weighed myself in a while I’m now back to what I was before I started Slimming World three years ago and am 10 stone 4lb.  I aim to lose around a stone and then see how I feel about losing a bit more.  Obviously I’ve not been able to go to Jazzercise due to lockdown, so I’ve started going for a walk in the evening instead.  I’ve been going for a 20 minute walk on my own then taking Noah out for a walk in the hope that it will tire him out.  He never went to sleep until 10.20pm last night so you can see that’s going well!!

Anyway enough of my rambling and back to this veggie breakfast tray bake! I have been doing a lot of tray bake meals lately as it saves on time and washing up.  There’s no need to use 46762 pans and utensils for cooking these types of dishes.  Just a baking tray, a knife and a wooden spoon!  So much easier to tidy up after cooking.

This Veggie Breakfast Tray Bake is packed with veg and protein so is very filling.  I used Linda McCartney’s Red Onion and Rosemary sausages as these are syn free plus sweet potato, onions, mushrooms, tomatoes, beans and eggs.  If you use Quorn sausages remember to syn them accordingly.  You could even add in some spinach or kale to increase your speed food.  Serve with some toast for your Healthy Extra B.

Veggie Breakfast Tray Bake

This Veggie Breakfast Tray Bake is the perfect weekend lazy breakfast or brunch.   This syn free dish is packed full with veg and protein so it will fill you up until dinner time!

Ingredients

  • 3 Medium Sweet Potatoes
  • 2 Medium Onions
  • 4 Linda McCartney’s Red Onion and Rosemary Sausages Frozen
  • 8 Mushrooms Quartered
  • 8 Cherry Tomatoes Halved
  • 1 400g Baked Beans
  • 4 Eggs
  • 1 Tbsp Fresh Parsley Chopped
  • Frylight
  • Salt and Pepper

Instructions

  1. Preheat oven to 200°C or 180°C (fan)

  2. Peel and chop sweet potatoes. Peel onions and cut into wedges.

  3. Place the onions and sweet potatoes into a large baking tray and spray with Frylight before placing in oven for 20 minutes.

  4. Remove from oven and add the mushrooms, tomatoes and sausages. Return to the oven for another 15 minutes.

  5. Remove from oven again and make 4 spaces in the tray to crack the eggs into. Add the beans around the tray then return to the oven.

  6. Cook for another 10 minutes for a soft egg yolk. If you prefer a hard egg yolk cook for a bit longer.

  7. Season with salt and pepper and garnish with the chopped parsley.

Possible Variations:

 

Make it vegan ?:  Omit the eggs

Use Meat: Try adding bacon or sausages.  Remember to cut off the fatty bits and syn the sausages.

Make it spicy: Add some chilli flakes if you like some spice.

Change the veg: You can use other veg such as chopped peppers, white potatoes, butternut squash, spinach, or anything you like.

      Thanks! I know mushrooms can be a bit like marmite that you either love them or hate them. 🤣 I’m sure you could swap it out for another veg instead or add grated cheese to it.

    Your Frank truthful confession stole my heart to restart slimming world. I too have put on the stone I lost intially but would ideally love to lose 2.
    So sorry to hear of your dad passing I work in the health service and I’m surrounded by sadness.

      Hi Hannah

      I suppose you could cook the potatoes, sausages, etc in the air fryer then add in the beans later on the plate before serving. I recently got rid of my air fryer as rarely used it and it was taking up too much space on my worktops so can’t experiment with it myself. If you do give it a try let me know how you got on with it. 😊
