This is a pretty surreal time to be living in just now. The UK is in lockdown, we can’t meet up with our family and friends and we are having to queue for nearly 2 hours to get into a supermarket to hopefully pick up a packet of toilet roll! Even if you are lucky enough to bag a supermarket delivery slot you can guarantee that there will be many items missing from your order! This means having to conjure up meals from what you have from your store cupboard, fridge and freezer. Sometimes you can lack imagination and after a few nights of eating freezer food you want to be inspired with some delicious dishes. Hello Fresh have an extensive recipe list on their website with meals such as Mexican ‘Dirty Rice’, Chicken and Chickpea Korma Crumble and Turmeric Roasted Cauliflower. Most of these recipes contain items you will already have at home.
I decided to give the Beef Ragu Rigatoni with Olive and Tomato Salsa recipe a try. I modified it slightly to make it more Slimming World friendly by not using the olive oil suggested and this made it syn free. As I didn’t have any rigatoni, penne pasta worked just as well as would any other pasta. It was really easy to make and took around 40 minutes in total to prepare and cook. While not everyone is a fan of olives I found that the mix of the salty olives and the sweet tomatoes really enhanced the flavour. Capers would probably work just as well if you have them. I will definitely be making this recipe again. I’m also going to be adding the Olive and Tomato Salsa to many dishes as it tasted so good!

Put a large saucepan of water on to boil for the pasta.
Peel and chop the onion into small pieces. Halve the pepper and discard the core and seeds. Chop into small pieces. Using a garlic press mince the garlic clove.
Spray another large saucepan with Frylight or other spray oil. Put on a high heat. When the pan is hot, add the beef mince and cook until browned for 5-6 mins. Break the mince up as it up as it cooks. Season with salt and pepper. Add the chopped onion and pepper. Cook until soft for 5-7 mins.
Stir in the garlic, dried thyme and tomato purée. Cook for another minute. Add the chopped tomatoes.
Pour the water into the pan along with the beef stock pot/cube. Bring the ragu mixture to the boil and then lower the heat. Leave to simmer until the ragu is thick and tomatoey for 15-20 mins.
Add the pasta to the pan of boiling water. Cook for 12 mins or until al dente.
While the pasta is boiling, make the salsa. Finely chop the black olives and chop the vine tomato into small pieces. Place them into a mixing bowl, season with salt and pepper and mix together. Set aside until ready for serving.
Once the pasta is cooked, drain then add the pasta to the sauce and mix well. Serve topped with the salsa and a sprinkling of grated cheese.
Serve with a side salad and some garlic bread for a delicious Italian meal. Buon appetito!
