I haven’t done a recipe post in a long while, partly due to lack of time for trying new things out but also when I was temping and being out of the house 50 hours a week I was relying a lot on ready meals. When I have been looking at ready meals I have really struggled to come across any that have neither gluten or dairy in them but I have discovered that Marks and Spencer have a good gluten free range but some of their products do contain milk.
So here is a gluten/dairy free recipe for you! And even if you aren’t intolerant then it is still worth trying as it is very tasty :)! This is also Slimming World and Paleo friendly, the whole recipe is 3 syns (for the honey) so works out less than 1 syn per portion.
You will need (makes enough for 5 good sized portions, or 4 if you are very hungry):
Beef Mince 500g (Less than 5% fat for Slimming World friendly or you could also try it with pork or turkey but remember and syn this)
Yellow Pepper – half and finely chop
Small Red Onion – half and finely chop
Mushrooms – 2 medium sized and finely chopped
Egg – 1
Fresh Thyme – 1 Teaspoon
Garlic Clove – 2 Minced
Salt & Pepper to season
For the sauce:
Passata – 4 Tablespoons
Honey – 3 Tablespoons
How to make:
Preheat oven to 180 degrees (fan oven)
Fry the mushrooms and pepper until soft
In a large bowl add the mince, onions, garlic, mushroom and pepper mix, egg and season with salt, pepper and thyme. Mix well until the mushroom mix is distributed evenly as this helps to bind it all together.
Lightly grease the loaf tin (I sprayed with Frylight) to stop the mixture from sticking.
Add the meat to the tin pressing down well so the ingredients are tightly packed then place in the oven.
Mix the honey and passata together in a cup.
After the meatloaf has been in the oven for 15 minutes, remove and pour the sauce over the meatloaf and then cook for a further 45 minutes.
Serve with veg, mashed potatoes or with whatever you fancy. I served mine with butternut squash fusilli, beetroot and broccoli for speed food as I am following a Slimming World diet.
